Kind of along the lines of what Dave was saying, your services are offering them much more than just a $200 pre-built store. Part of your job as a developer is to convey your value above what the stock solution would provide. As their developer, you are presumably helping them get a host setup, a domain, recommending or registering them with a payment gateway, shipping providers, branding the store, customizing emails, etc. I would make a list of the things above and beyond the stock store then you always have that to fall back on and can point the customer to exactly the value they got by having you as their developer.
