Is there a way to track what Coupon Code is used?

Well, that will store the coupon code in the VARIABLE_NAME column of the SESSION_VARIABLES table, but it will not have any connection to the order that is placed.

In powerStore, on the comfirm page, there is a store order summary server behavior that is already configured to store the order information in the order table. You should add a coupon column to the order table, then edit the store order summary server behavior to bind the coupon code session variable to the coupon column in the orders table.
