different formats based on server?

I performing some test with Universal Email:
I have exactly the same files on 3 different webservers (2 online and 1 local) but I get the emails correctly formatted in HTML from 1 webserver only. The other 2 webservers (1 online and 1 local) returns the emails in this way:

Content-Type: text/html
<p>Testing message.</p>

What could be the cause?

Any suggestion will be really appreciated.

Edit: the wrong email format above is displayed on my email client and also on gmail webmail to a different address.
