Just wanted to let you know that I finally have this issue resolved. Per your suggestion, I gave up on the email of order details (due to paypal standard) and can fit my order description plus option details into the 127 character limit that paypal standard allows. Removed gift message and wrap off my form as it can be added on the paypal end (and therefore does not have to fit into the description character limit). I added the if statements on both pages (cart and confirm) so that if an option was not selected it would not show up.
