Show column based on value of other column

I have a number of different types of products/events bookings to put into one shopping cart, along with two different price structures (member and non-member).

I can show regions according to logged in/not logged in rules, which deals with my price structures (I've sorted out the calculations, so that's all ok - it's a manual cart) but can't work out how to hide columns that are used/not used for different products.

Here's the main one:

Booking Camping: This needs to show these columns: Number of People AND Number of Nights
Booking Dinner: This needs to show only the column: Number of People

It seems it would be best to add a Table for Product Type, with ProductTypeID column (say, 1 for Camping, 2 for Dinner and so on) and use the ProductTypeID to determine whether the Number of Nights column shows.

Am I on the right track, and if so, how would I code that rule/instruction please?
