I don't need to make any tables on the page such as what Chris shows in the second thumbnail?

the table is used for design purposes, instead of using a table, you could use a div to create your design. At the end of the day, the table is just a container used to show data on the page

The exampe recordset with the repeat region will cause however many products I have "activated" in the database to populate on the page?

the recordset you create will return the activated products based on the query.

A basic query that would return all column s and records from a table would look like this:

SELECT * FROM tableName

to return ecords based on a column value, you would need to add a where clause:

SELECT * FROM tableName WHERE columnName = 'value'

Last question, what determines what product info from the 20 products is shown on the page? (I'm guesing maybe the "Show if"."

you determine what product info is shown. once you have created the recordset, and have added a container for the data display (table or div) you go to the bindings panel and expand the recordset group. You can select each of the columns that you wish to display to add the bindings to the page, then add the repeat region
