nested dynamic menus

I am wondering, with daves code of a dynamic nested select list - I could in theory put these select lists (there would be 3 (the main category > subcat1 > subcat2) on the actual page where I create/update the product. However what I am trying to understand the value that is reached from the selection process - how would i store that into the categoryID field of the product record (what I mean is, all 3 values could possibly be a candidate to be a value stored in the product record since a product could belong to either the main category or cat1 or cat2 therefore I would need to be able to capture which value the client decides upon).
