Correct Workfow?

My client wants me to work on getting the products I have online. I have the 6 with dynamic pricing and 8 static products that come in 1 size. Is my local computer the only way my client can preview the site before going live?

I am now running the checkout wizard. I am on the last step where it wants to create all of the confirmation, success, failure, etc. pages.

I am using sagepay.

A few questions:

Should I use one of my templates (which I would need to modify), or let ecart make the pages? Will not using a tempate effect the continuity of my site?

Do I need to change any of the site or checkout fields, or can I leave them at their defaults? I looked at the help sections for those options, but I am still unsure. And will those fields need to be changed when the site goes live on godaddy?

Do I have to be live on godaddy to test transactions and such?

One more question: What do I need to do to do to get a text field on every page displaying how many items in cart?
