Character Sets and Irite

Hi

I originally used the UTF-8 characterset on my pages. When information including symbols is inserted into the irite field, they come up as unrecognisable symbols, for instance the £ sign come in as £

I then tried using ISO-8859-1 - but still the problem arisies. can you tell me the best character set to use ?

UTF-8 is generally considered the most all-inclusive. What characters where you using? Where did you update the charset setting?
