update record, dfp2 not working

I've got an update record created using data assist and it works fine.

However, replacing product image or thumbnail doesn't work for some reason.

Went through same process for inserting a product and that worked fine.

Have attached my product update page as a ref.

Please post a support incident. There is a bug in the default value option that causes problems in the update scenario. That is likely what you are running into.
